We eat salmon on nearly a weekly basis because there are just so many easy and delicious ways to prepare it! This week I decided to try something new with my weekly salmon ritual. I baked the salmon with apricot preservatives, and nothing fancy either – just the good ol’ Kroger brand preservatives.

Hello, Easy Apricot-Glazed Salmon.

This salmon recipe is ridiculously easy and divinely delicious! It’s perfect for summer nights. Seriously who wants to be stuck in the kitchen for hours when the sun does’t go down until 9:00 pm. I made this for dinner Monday night and after cooking, eating, and dishes, we still had time for a bike ride.

This week has been amazing for so many reasons. I decided to take a few classes with a local photographer in my area. So, next week I start learning from Ashley Morgan Photography. I have learned so much on my own through food photography, but I want to be able to take awesome photos all the time.

On Monday, I got inspired to do a design re-do of my blog. Since I started my blog last fall, I have been working to get the design of my blog at a point where I would absolutely and completely love it. I mean, I had been following the example of some of my favorite food blogs so I should love it right? Nah, I’ve only kind of liked it. I was on the computer pretty late that evening, when I had a blogging epiphany. I know exactly what I want my blog to look like and the direction I want to go in!

Now, I am in search of a blog designer to make my vision come on screen. I am seriously all giddy with excitement and hope to be able you to reveal the new blog design by the end of the summer!

Easy Apricot-Glazed Salmon

Ingredients
  • 2 6 ounce salmon fillets
  • 2 teaspoons balsamic vinegar
  • ¼ cup apricot preserves
  • 3 teaspoons garlic powder
  • 2 teaspoons sea salt
Instructions
  1. Preheat oven to 400 degrees F.
  2. Mix vinegar, preserves, garlic powder and sea salt in a small bowl to make glaze.
  3. Brush glaze over salmon and bake for 15 minutes (also good grilled, covered, 3 to 4 minutes each side).
