I have been busy traveling for work, so now that I’m on the Florida coast, I figured it was the perfect time to post what is now one of my all time favorite!
The best things in life are worth working hard for, but the best kind of food is the kind that takes 5 ingredients and 20 minutes to create a mouthwatering dish.
Baked in fresh grapefruit and lemon juices with grapefruit slices, pepper, and a pinch of salt, this Simple Baked Grapefruit Salmon will add a flavorful zing to your date night or weeknight dinner. Lately I have fallen in love with Grapefruit, but only after years of refusing to touch one. Now grapefruit is one of my favorite things to have for breakfast, but it is as if God created grapefruit to go with salmon. The juices from the lemon and grapefruit seeps into the salmon to create a juicy, mouthwatering, and unique flavor that is out of this world!

Salmon is my favorite type of fish, and one of my favorites foods – and trust me, our monthly grocery bill can testify to that! Whenever we go out to eat, I almost neva-eva order salmon, because I am convinced I have never tasted better salmon in a restaurant than I can make at home. Why would you pay $25 for a small fillet of salmon with a small side of vegetables, when for $6.99 you can get a pound of salmon and make this recipe at home, and eat salmon until your pants feel tight.
Traveling should always your one exception, because salmon is always a great healthy option when you are traveling!
In fact, I am sitting in a restaurant of my hotel, watching the sun go down over the Fort Lauderdale coast, enjoying some salmon over a bed of fresh greens. Sunsets over the water are one of my favorite things about visiting somewhere coastal. The grapefruit pinks, lavender purples, and sunflower yellows blend together and reflect over the ocean to create a unique master piece every evening.
The perfect ending to a wonderful work trip week because tomorrow “I’m leaving on a jet plane”, and I’ll be soooo happy to be home again.
- ½ pound salmon
- 1 grapefruit
- ½ lemon, juiced
- pinch of pepper
- pinch of lemon salt
- Preheat oven to 350 degrees.
- Place ½ pound salmon on a sheet of foil, and round the corners to create a type of bowl with the foil (this will hold in the juices).
- Drizzle lemon juice from half of lemon and half of grapefruit over salmon. Sprinkle over pinch of salt and pinch of pepper.
- Cut ½-1 inch thick slice of grapefruit and place on salmon. Roll up foil until salmon is covered.
- Cook for salmon for 18-22 minutes on the top shelf.
- Optional: I love serve this recipe topped with fresh grapefruit and basil!
